I made my own version of this recipe w/left over ingredients from tacos... seasoned taco beef, queso dip and salsa! Followed recipe - next time I would add less water maybe only 1/2 - 1 cup. Other than that its a great throw together recipe from left overs. However, I do not think it would have been as good w/o seasoned beef so if you follow the recipe as is - season the beef :)

My two year old actually LIKES this! I am so happy! I added a little bit of taco seasoning to it and it was incredible! Thanks for the recipe!

This goes really well with tortilla chips. My family prefers it with less cheese than the recipe calls for.

I volunteered to cook supper tonight for my mom and I. I wanted something fast and easy, without having to buy many ingredients. I was a little hesitant about this recipe at first. I was going to substitute the salsa for pasta or pizza sauce, but decided to go with the salsa. I'm kind of a picky eater, and not a big fan of salsa. But I have to say, I really liked this recipe. So did my mom. I did make one small change to the recipe. I substituted rice for the pasta. I think this would be a great dish to take to a potluck. I will definitely make this again.

I have made this dinner 5 or 6 times. It is very tasty and is quick and easy. I like to sub out 2 cans of Rotel drained for the salsa. It is a little cheeper that way. Overall great dinner. My family loves it!

This recipe was delicious! It's a main dish with the "comfort food" of mac and cheese and a Tex-Mex twist. I cut the recipe in half, since it's just my husband and me, though I wouldn't have minded having leftovers! My husband loved it, even though it fell under the "healthy food" category. And...there's only one skillet to wash!

we tried this recipe and i was amazed at how simple it was to make.we used kraft deluxe instead of velveeta, because we find the deluxe to taste better.we will definitely try this over and over again.

Used a different salsa and added some veggies, but that made it even yummier!
