I used a carrot cake mix and used icing with a star tip. I only used the coconut on the ears and bowtie that way anyone that doesn't like coconut cut still eat it. The kids loved the fact that a bunny cake was made out of carrot cake..lol..

What a joy to make and watch everyone smile!! I would have given it a Superb rating but the template was extremely difficult to work with unless you have a lot of photo experience. My husband turned the piece I needed to cut into a word document formatted to fit the 9 inch pan size perfectly though and would be welcome to share it if you would like. Just let me know

I found this recipe 11 years ago and have made this cake every Easter. We make one without coconut too. My 3 children range in age from 8 - 15 yrs old and this is one of our favorite Easter traditions. We alter the decorations with icing, chocolate chips, gum drops or other candy. We have also placed the bow tie between the ears & face to create a Girl Bunny. It's a great recipe !

When my children were small, I used to make this cake at Easter. It was very popular with the little ones and big ones too. It took me back a few years when I saw the picture.
