Bunny Cake

My aunt always made this cake as I was growing up. I never ate it (like most children I didn't like coconut) but I always admired it. I decided this year instead of the usual 2-layer carrot cake, I would make a carrot Bunny Cake. I made my homemade carrot cake in two 9 inch pans. Then I cut and assembled following the directions and iced with my homemade cream cheese frosting. For the appearance of fur, I piped the frosting on with a small star tip. Then I decorated with M&M's and licorice. It is absolutely adorable.

I made this last night using a light, lavender-vanilla cake recipe I made when I lived in France.....it's been two years since I moved, but this cake brought back so many memories....I used a wine-infused cream to make the ears for my husband and I, and a strong lavender-butter one for the rest of the cake. Decorated it with a chocolate beret and sugar-spun scarf. Adorable.....but by the end, the face of the cake looked like a posh Frenchie. But that's why I loved this recipe, you can do anything with it.

This is a great recipe for the kids. Jazz it up by putting the finished rabbit in a large flat pan, surround it with grass (green dyed coconut) and put jelly beans and candy eggs in the "grass". I make it every year. My son is now 26 and he still loves it.

I made this for our Early Easter celebration yesterday! What a hit!! My Grandaughter loved it and so did the big kids!! I used whipped frosting and it turned out so good. Of course I will make this again. They loved it

I too have made this cake for over (gulp) 30 years and this year my son is making it for his family! Whether you can find all the candies and ingredients or not, you can always make this Bunny Cake yours by adding your own personality into it! This was a great tradition in our household.

I have made this cake for over 20 years. Sometimes hard to get the right candy decor. It was a favorite Easter dinner treat with my kids and now my grandkids. My recipe is torn, splattered and yellowed, but it makes a crowd/kid pleaser

My daughter's birthday is around Easter time, so she often requested (and got) "her bunny cake".

My mom used to make this for me when I was a little girl...now I make it for my kids, I have been making it for years. It's good, easy and fun...I have to say it's one of my favorite cakes

This is my FAVORITE cake!!! My mom has been making it for me since I was a little girl (over 25 years). It is such a treasured childhood memory. She always makes it with 7 minute frosting, it is extra sticky.
