My family absolutely LOVED this! I did use minute rice instead of long grain and we added salsa for a bit more of a kick. Keep on with fantastic recipes like this!

I tried this recipe simply because we had all the ingredients on hand. Everyone loved it, even my picky preschooler. To tell you the truth, I liked it even better as a lunch leftover!

It was ok,the next time we cooked it we used hash brown patties instead of rice and piled the other ingredients on top and added swiss and american cheese.Much better with sliced jalapenos also.

This recipe is quick, easy, and so delicious. I have made this recipe many times. I use at least 1 1/2 cans of tomatoes. I also include a little minced garlic. Family enjoys this recipe. Will continue to make this recipe in the future. Excellent & Easy!!!

I made this using chopped tomatoes with green chillies just to add a little kick! I also used grated Mexican Velveeta, and served it with a dollop of sour cream on top!

I browned the green pepper and onion with the ground beef since I used Minute rice. Also added 2 cloves of garlic and 1 1/2 c. water since the (Italian style) diced tomatoes didn't have enough liquid to simmer the rice in. Great recipe!
