I made something similar to this at a cooking class in school. It is quick (I was only a beginner) and delicious. However, in my version, I leave out the cereal. I also add less salt, a teaspoon of cinammon, about half a teaspoon of ginger, and half a teaspoon of nutmeg to make it more flavorful.

I am not a fan of low fat items but I thought I would try it. It was good on it's own not but not a replacement for a "real muffin". My husband and I thought the flavor was a bit bland & almost bitter. I did use applesauce that was not extra sweetened which may have been the problem. They were great with cinnamon butter -which defeats the purpose I suppose! haha

So quick and simple! My husband loved these muffins. For a fresh hot treat, I put them in the microwave for 20 seconds, and they're fantastic. My kids were picking out the raisins, so maybe I'll leave them out next time. Also, the cereal sat in the milk for a lot longer than the recommended 3 minutes, so I ended up with a much smoother texture, but my family seems to prefer it that way. We'll definitely be making these again, probably with some minor changes. We love them!

Great quick recipe. I just grab one on my way to work. These muffins took no time at all to make!! And, they are good for you!!

The muffins were fair. Not enough flavor for my family. Maybe some additional spices would help. Just seems like it was missing something.
