I would like to make this in cupcake paper cups, can they be frozen (without the topping) for 1 week, and what is the best way to defrost them?

This is the easiest way to make a glorious dessert! We loved it! I think it actually took less than the 10 minutes stated,too.

I'm not a baker, so this recipe was perfect. I added a tsp. of vanilla extract to give it a bit more flavor, and the taste is incredible! This is definitely going into my recipe book!

I substitued Splenda for the sugar and used half fat free and half regular cream cheese because I am on a sugar restricted diet. I also added 1/2 tsp. vanilla and 1/2 tsp. lemon juice and sprinkled chopped pecans on the top. I always make two pies at a time. Everyone at the church pot luck loved it! It is so light and fluffy, there is always room for desert.

YUM! I love this recipe. Sometimes I make it with an Oreo crust instead. It is so easy and soooooo great.

This Fluffy Cheesecake was EXCELLENT! I made it 3 x's in the same week, it was such a big hit at our house. It is wonderful for Low Carb counters...especially Atkins Lifestyle people. I used Splenda as opposed to sugar, and I skipped the Crust. So we had a fluffy Cheescake w/o crust and it was so delicious!!! I allow it to chill in the frig for 24hrs and cut it with a cake cutter. Try it!!

This has become a favourite at family gatherings. I add an extra pkg. of cream cheese. Excellent.

I also added strawberry preserves instead of the whole cranberry which was very good . It's a quick and tasty dessert.
