I omit the cake all together and use frozen fruit instead of pie filling. I have made it sugar free (using sugar free jell-o, pudding, and cool whip) for occasions when diabetics are attending and no one can ever tell the difference! I have also done different flavors of jello with different fruits. I have done orange (I use the canned mandarin oranges in juice - not syrup), peach, strawberry, cherry (I have used frozen black cherries and also maraschino cherries - both are very good!!) This has become my staple dish at every get together and if I don't bring it, people get upset! I recommend this dish whole-heartedly... It is a beautiful dish that looks like it took a lot of effort, even though it's very simple.
