I haven't tried this recipe yet, but am excited to! I LOVE pancakes, but like to make them lower fat, & w/ no added sugar, so this recipe sounds like a good one for me! I also LOVE bananas, so I'm sure this recipe will be good. I will add 1 tsp. vanilla extract & 1 tsp. banana extract to the batter as well...and I will chop the bananas in pieces instead of slicing them. This will probably allow for more banana flavor throughout.
