Meringue-Topped Southern Banana Pudding recipe

Cooked vanilla pudding is layered with banana slices in a vanilla wafer-lined dish, topped with meringue and baked. Serve warm or chilled for dessert.

pkg. (4-serving size each) JELL-O Vanilla Flavor Cook & Serve Pudding

eggs, separated

NILLA Wafers (1/2 of 12-oz. pkg.)

large bananas, sliced

Dash cream of tartar

Make It

PREHEAT oven to 350°F. Add milk to dry pudding mix in medium saucepan; stir until well blended. Lightly beat egg yolks in small bowl. Add to milk mixture; mix well. Bring to full rolling boil on medium heat, stirring constantly. Remove from heat.

ARRANGE layer of wafers on bottom and up side of 2-qt. baking dish. Top with layers of one third of the pudding and one half of the banana slices. Repeat layers; cover with the remaining pudding.

BEAT egg whites and cream of tartar in medium bowl with electric mixer on high speed until foamy. Gradually add sugar, beating until stiff peaks form. Spread over pudding, sealing to edge of dish.

BAKE 15 min. or until meringue is browned. Cool. Serve warm or refrigerate until ready to serve. Store leftover pudding in refrigerator.

excellent recipe it goes back 3 generations in my family. So I'm passing it along to my granddaughter to have handy when she is old enough to learn to cook

I made this recipe over the weekend, I just made a minor adjustment I used the banana pudding instead. I might suggest you don't keep leftovers for more than 1 day, you see the cookies get soggy, then it's not very tasty. Other wise my family really enjoyed this. Great for pot-lucks.

I've been making this recipe for many years, however I usually make my own home made pudding for the recipe, but if pressed for time, the pudding mix works very well. My family loves this dessert.

I too intend to try banana pudding next time. Excellent recipe but I am a springboarder -so- perhaps adding some rasberries???

Taste just like Mom used to make. I just browned the meringue under the broiler and it came out perfect.

the recipe was good, I didnt use the last step though. I thought it was better with out the meringue. I am not a big meringue person. But the puddin was good.
