Southwest Potato-Corn Chowder

Southwest Potato-Corn Chowder recipe
Warm, hearty, chunky—and it all comes together in one saucepan. Red potatoes make it hearty, hot pepper cheese adds the spice and bacon does what bacon does—makes it awesome.

I would make adjustments to it if I make this again.

This was my first attempt at making a soup and I wasn't sure it was going to be good or filling. Boy was I suprised!! Easy to make and SO SO SO Delicious. My husband and I both had a full bowl and it was filling enough that we didn't even get seconds - leftovers for the next day! I couldn't find the cheese cubes so I used pepperjack cheese (10oz block) and almond milk instead of regular milk. I am definitely making this again!!

My husband was afraid that this wouldn't fill him up but it was hearty and delicious!

Love this! I think it'd be just as good as is, but I did not fry bacon; I used the Oscar Meyer Real Bacon Pieces: EVOO to cover the bottom of my pot in replacement of the bacon grease. I also added about 1 cut of chicken broth throughout the cooking to thin a bit. Otherwise - DELISH!!!!!

I left out the onions and celery, and put green onions on top. Delicious!

This was yummy. It was a tad bit too spicy for me, but that is a personal preference. I will use a little less pepperjack next time. I could not find the processed food product in my grocery so I used just a block of pepperjack cheese that I shredded. Was delicious!
