This was my first time making a soup of any kind. It turned out wonderfully! Very easy! My son, who loves soup more than anything, and my husband had thirds. They can't wait for me to make this again!
I loved making this soup. it was pretty easy. The only thing i would say is that you need to cut the potatoes in smaller bite size pieces. i also used more thn 4 slices of bacon. but thats a personal preference.

I work on my counties election board and I made this chowder for our election day lunch. I doubled the recipe and was greatful that I did because it wasn't just lunch it was dinner to!! Wow! This was fantastic. I used Simply Potatoes from the refrigerated section of the grocery. It sped things up since those potatoes are already fully cooked and diced. Also used already cooked bacon (thick cut). I have no idea what the Hoffman's cheese is, and couldn't find it, so I used Velveeta Pepper Jack, which was devine. Highly recommend this recipe.
I've made this a few times for company, everyone loves it...I've learned to bring extra copies of the recipe with me when I bring it. I usually cook up and toss the whole pack of bacon in, and if I only have velveta, then toss in some cajun spice and chili powder so I don't have to run to the store special for the cheese. SO easy, and it's a great use for all of those potatos that need to be used up.
