I used self rising flour, because thats all I had. Omitted the baking powder and salt, doubled the recipe, sifted the flour and sugar together, added 1/2 tbs of vanilla. Mixed with the hand whisk and dropped by the 1/4 cup into a buttered 350 degree electric skillet.Made 14 pancakes about 6" each. And they were great!
