This turned out better than I expected. I have ordered pineapple fried rice at a local Thai restaurant and this was just as good as theirs. I was worried about the tofu but it was good!

I used Hawaiian style tofu instead of the firm tofu. I think it helps create a more distinct variance of texture between the tofu and rice.

Very tasty receipe with easy to follow directions. I made it for some vegan friends of mine and enjoyed many compliments.

Very tasty. It stands up to a good deal of heat, too, so if you're a chilehead, toss in chopped serranos galore or a minced habanero or two. Also good with cashews.
