I've made this for years as my Mom did, but with a bit of romano cheese added to the egg mixture and let it cook on top of stove with a cover, then flipped it over, once it was set, so both sides would be brownedl....it has always been a favorite in our family!

I've made this three times since Easter. We love asparagus. This is a great breakfast meal. Reheats well in the microwave.

I made this for my family, and everyone hated it. It's like a big omlette with asparagus. In the pic, it looked good, so I made it. I was very disappointed once we started eating. Eggs and asparagus just don't go together, and we like asparagus by itself!

This was delicious. Next time I would add salt and pepper to taste and I think chives would add an intersing taste to this recipe. A versatile recipe that you add to easily. Quick and easy too!
