Since fresh asparagus are in such a short time, I do not want to lose the taste to other flavors so I just stem and butter them.That was the way my mom fixed them and I'm still following that method.When the fresh are not available, I use canned ones in a salad;with lettuce, cottage cheese,pickled beets.minced onion,and salad dressing of choice.

Thanks! Reminds me of the "gourmet" asparagus dishes that my mother made in the 50's using fresh asparagus from her garden. That patch is still being harvested today.

I substituted fat free cheese and egg beaters to lower the cholesterol and it turned out wonderful. A dash of hot sauce perked it up as well. A great breakfast for guests!

This was absolutely fabulous. I added a couple of shakes of red pepper flakes to it also.

This recipe was easy to make and delicious! I have a cast iron skillet that easily went from the stovetop to the oven. What a great combination.
