This recipe just needed a little spice. I added some chili powder and cumin, and a little salt, and it came to life! I also served it with salsa, which was amazing. My husband claimed that it was my best dinner yet!

Just great would use regular brown rice and cook it in advance. Your recipe for adding instant rice just dried it out too much. Also, added a dab or low fat sour cream on top before serving it.

This recipe is AMAZING!! My husband and I both loved it!! In addition to the green peppers, I added red peppers, yellow peppers and yellow squash. Then topped off with sour cream, cubed avocado, and more cilantro and cheese.

It's OK, but I found it a little bland after a while. I needed to add some Frank's Hot Sauce to splice it up a little for flavor and saltiness.

Wow, this was awesome! My husband, who is a total meat fanatic, loved this one. I didn't look closely at the directions, and I ended up buying slow-cooking brown rice, so I just tossed it in my rice cooker and put it in the skillet to warm it up as the meal was finishing cooking. I am making it again tonight, and I think this will be a weekly favorite!

This was quick, easy and very tasty! Instead of diced tomatoes (didn't have any!), I used tomato puree and added some water. Whole family liked it!

This dish was a good addition to quesadillas or tacos. It was spicy but not too hot. Good for meatless meals.
