This is a great go-to recipe for a change of pace from other Mexican-type dishes (fajitas/tacos). Tonight, I decided to make it ahead of time and chill it to make a Southwestern Pasta Salad :) I just added the extra cheese, cilantro and lime juice after it had chilled!

This was fine. Kind of like a taco in a pasta bowl. Everyone enjoyed it. I would make it again, it is easy. Easier to eat than tacos, less mess!

This was a great recipe - something a little different than just your typical spaghetti or tacos. Also very easy to make! The only corn I had was salted but it still tasted fine. You can eat it with tortilla chips for extra texture =) Husband approved!

This is one of my family's favorite recipes! It seems to get requested at least a couple times a month. We use ground turkey instead of beef for less fat and medium salsa to add some spice.

Good recipe. Needs a little salt added someplace.

My husband was unsure of this meal when he first saw it. As soon as he tried it, though, he was amazed. I made it two weeks ago and he still talks about it. I will make this again - it's delicious!
