This was really good. You have to be careful to let the squash cool long enough before you cut it open. It really stays hot inside! I tossed in some fresh basil and chives with the parsley and added a pinch of red pepper flakes and a drizzle of extra virgin olive oil right before serving. I didn't have the mozzarella, so I doubled the parmesan and left it on the table for a little extra topping for each serving. This really makes alot!!

I thought this was pretty good with the potential to be very good. I had a hard time getting my squash to cook, I almost doubled the cooking time. I was also serving as a side dish so I did not mix all ingredients together right away and the cheese was a little clumpy, but it still tasted good. I will try it again.

I loved this recipe. I didn't have any Muzzerella so I used Swiss cheese and it was delicious. My husband thought it would be better with polish sausage added to it. I certainly will be making this again and again.

After cooking the squash and removing the "spaghetti, I placed it in a skillet with a small amount of extra virgin olive oil, 2 teaspoons of oregano and pepper. I allowed it to cook for about five minutes. I added the other ingredients and lightly sprinkled it with sea salt before serving. It seems as though the extra cooking gave it better texture and the oregano added more flavor.

An iteresting and attractive dish, but absolutely no flavor! I used real grated parmesan, and it still was dull, dull, dull. I would make a variation of this in the future, but with some seasoning!

Easy and quick. I used mexican cheese blend instead of mozzarella and diced canned tomatoes. This dish was awesome.

it was good the only problem was that i used diced canned tomatoes and i accidentally used the one with green chiles in it but it was still tasty.
