Very easy and delicious! I used Italian-style diced tomato (has oregano & basil) to give a little more flavor and added a can of cannelli beans. Great the next day as well!

I cooked this recipe for my sister and brother-in-law and I never cared too much for minestrone soup but this was a knockout with everyone, including myself! **LOVED IT!**

i loved this recipe!!! very hearty and low in calories. i used chicken broth instead of water, and ground italian sausage instead of the boca.makes a bunch to. i don't recommend doubling this recipe.

This came out very well- and is so thick it's more like stew than soup. I used chicken stock instead of water for xtra flavor and turkey sausage since I couldn't find the Boca in my area. I'll make it again.

A quick, yummy soup. My boyfriend doesn't like spinach nor sausage, and he loved it, as did I. Instead of water I used chicken stock. A great meal on its own.

This was wonderful! I used bulk italian sausage instead. My husband is neither a soup fan nor a tomato fan, and I couldn't keep him out of it! I will definitely make this again.

This soup was more like tomato soup. Next time I would only use half a can of tomatoes, and chicken broth instead of water.

This soup is great. My family really enjoys it. I have made it several times. I think it tastes even better with regular mild italian sausage.

I substituted regular Italian Sausage for the Boca and served at a recent party and everyone loved it!! Everyone wanted to recipe!

I followed the recipe exactly and loved it. I was actually picking a recipe for lunch at work and this one hit my eye.
