I decided to grill the salmon in my fish griller on the barbecue - lots of mess - next time I will grill the salmon in foil packets.
I cannot believe how quick, easy, and wonderful tasting this salsa is, especially if refrigerated for a few hours to let the flavors intensify. I make it with vegetarian "salmon" and have started doubling the recipe to have enough to stir into the rice or couscous I serve the salmon over. Plain rice or couscous topped with the salsa is also a wonderful side dish for other Mediterranean meals!
My husband and I loved this recipe. Even my 7 year old liked it. It was so easy. Except I baked salmon in oven. I served it with fresh asparagus. The plate looked like we had gone out to a gourmet restaurant. Will definitly make again!

My husband also doesn't particularly like fish, but he asked for seconds with this recipe! I must admit I was a bit sceptical since I'm used to the traditional dill sauces with salmon, but I was very pleasantly surprised. Neither of us like olives, so I substituted fresh green pepper.
My husband's first comment was, "Did you really make this?" It was absolutely delicious, tasted like a gourmet restuarant entree. The best part was that it was so easy. Trust me, if I can make this, anyone can. WONDERFUL!
I have never tasted salmon so good. The salsa made a world of difference. It was too cold to grill, so i baked the salmon at 400 for 20 minutes lightly coated w/ extra virgin olive oil and a slice of lemon on top. Salmon can be a boring fish, but the salsa turned it into a gourmet meal!
So moist and yummy! I used the salsa on chicken too and it worked very well. I will definately use this again!
Great! I make this several times a month and the family loves it, even the 6 and 12 year olds. Also, great baked in oven on 350 for 20 min. (if you don't have a BBQ). Salsa taste great on grilled chicken with grilled asparagus.
The Salmon comes out so flakey and good on the grill. The salsa is a great compliment to the fish. I served this with the feta Rotini Salad.
