This recipe adds a delicious twist to the regular gingerbread cookie. My daughter has an egg allergy, so baking cookies for her is sometimes challenging. In place of the 1 egg, I substituted 1-1/2 T water, 1-1/2 T oil, and 1 tsp baking powder. The cookie turned out great, and my children loved helping roll & cut the gingerbread people.
