I used sugar free instant butterscotch pudding to cut down on calories & it came out great! The gingerbread cookies were very delicious tasting & looked great after decorating them with store bought tube frosting. I made several batches & gave them to my clients as christmas gifts. They loved them!

This gingerbread recipe is a keeper. I kinda had a hard time when rolling out the dough, but in the end, it worked out and they are very good.

i also did the same thing by omitting the quarter cup of the flour. I also noticed how easily these cookies roll out. What a great and easy way to make gingerbread cookies

These cookies were fantastic. Instead of making Gingerbreadmen, I rolled them and pressed them flate with a fort to make Ginger Snaps. Everyone loved them!

As a previous reviewer stated, use 2 cups of flour and not 2 1/4. These cookies come out crisp on the edges and soft in the middle. Also has a nice, light ginger taste and not too sweet.

I took the other posters advice and only used two cups of flour. These cookies turned out fantastic! Fun to make with the kids as well! Oh yeah, I didn't add as much ginger either.

This recipe was great. It was my first time making gingerbread cookies and everyone in my family loved them! I couldn't find butterscotch pudding in my grocery store so I used Jell-O Instant vanilla pudding instead. They still tasted like gingerbread! Yummy.
