OMG! After 44 years of marriage, I have finally found a gingerbread cookie recipe that I will make again. I, like others, didn't put in the fridge for 1 hr. The cookies that were made from the rerolled dough were as good as the first cutting.

We have made this a tradition in our house for four years. This is simply the best gingerbread cookie ever. Friends ask for them every year. They never stay around very long!!!

Very easy to make. I did not use any ginger, because I did not have any, but will the next time. Everyone was raving about them. I also found that I did not need to refrigerate the dough before cutting the cookies out.

I made these cookies using this recipe during the holidays last year and I have already done so this year. Everyone that has tried them loves them because they are always soft every time I bake them, which is a real plus. They are pretty fool-proof, hard to mess up!

The dough was so quick and easy to prepare, I let it chill overnight, and let my 3- and 4-year old children do the cookie-cutting and decorating the next day. They turned out very well, I will definitely use this recipe from now on!!!

This is a fantastic recipe. After reading other reviews, I used a little less ginger (only 2 teaspoons) for a milder flavor and I also found I did not need to chill the dough before rolling. When I make this recipe next time, I think I will use a bit less flour. I used a football-shaped cookie cutter and made gingerbread footballs and I piped on white icing to make the stripes and the laces you find on real footballs. They will be a hit at an upcoming football team fund raiser!

Made these last Christmas with my girls and will be making them again this year. They are the best tasting gingerbread cookies I've made and so easy.

These are wonderful gingerbread cookies. We make them every year for Santa with a tall glass of milk. They are a holiday tradition in the making.

We've made these the last three Christmas seasons and love them. We use a little less ginger than the recipe calls for, just because we don't like a strong ginger taste. My sons love that these gingerbread people have a tendency to "hide" from them a few times before Christmas--they have to find them in order to eat them! We enjoy these as a fun Christmas tradition.
