Butterscotch pudding is the secret to our super-moist take on these beloved holiday cookies. Our only advice: Don’t tell Grandma you've found a better recipe.

What You Need

3/4

cup butter, softened

3/4

cup packed brown sugar

pkg. (3.4 oz.) JELL-O Butterscotch Instant Pudding

egg

cups flour

tsp. baking soda

Tbsp. ground ginger

1-1/2

tsp. ground cinnamon

Make It

BEAT butter, sugar, dry pudding mix and egg in large bowl with mixer until well blended. Mix remaining ingredients. Gradually add to butter mixture, beating well after each addition. Refrigerate 1 hour or until firm.

HEAT oven to 350°F. Roll out dough on lightly floured surface to 1/4-inch thickness; cut into gingerbread shapes with 4-inch cookie cutter, rerolling trimmings. Place, 2 inches apart, on baking sheets sprayed with cooking spray. Use straw to make hole near top of each cutout.

BAKE 10 to 12 min. or until edges are lightly browned. Cool on baking sheets 3 min. Remove to wire racks; cool completely. Decorate as desired. Insert ribbon through holes to hang cookies on tree.

How to Decorate Cookies

To easily decorate cooled cookies, fill resealable plastic bag with prepared frosting. Seal bag and cut small corner off one of the bottom corners of bag. Roll down top of bag to squeeze frosting over cookies to decorate as desired.

I was skeptical of making cookies using butterscotch pudding, but after sampling these right out of the oven, I am very impressed! They were the best gingerbread anything I have yet tasted. I had to use a few tablespoons of water to get the dough to the right consistency in order to roll it out. My kids and I made boys, girls, dogs & birds, and they all stayed together superbly!

I substituted plain vanilla pudding mix, and it worked great. The dough seemed very dry at first, so I did add another egg, since mine were small. These worked out beautifully, very much like the ones in the picture. Smelled great and tasted even better. Will be cute Christmas gifts. This one's a winner. Will make trees with pistachio mix next.

I was very skeptical about this recipe when I saw it. I am not a fan of butterscotch anything. However,I just could not find a gingerbread recipe I liked so I decided to give a try. As it turned out, this was great. The whole family including people who typically don't like gingerbread cookies (because of the molasses in them) liked them alot.

So cute and yummy too! What I do is after the cookies are cooled and decorated, put in small clear baggies (mini gift bags) and tie it up with a ribbon. Makes wonderful gifts!

Gingerbread men are delicious ecspecially around fall they're great to give and to recieve the recipe is great and easy to make!
