I was skeptical of making cookies using butterscotch pudding, but after sampling these right out of the oven, I am very impressed! They were the best gingerbread anything I have yet tasted. I had to use a few tablespoons of water to get the dough to the right consistency in order to roll it out. My kids and I made boys, girls, dogs & birds, and they all stayed together superbly!
