My family enjoys this every time I make it. I add a little more of both cheeses and garlic powder. This dish actually taste better the 2nd day, after the flavors have had time to "mesh".
Make half the recipe and leave out the mozzarella cheese.
Wow! This was delicious and very filling. A perfect fall side dish!
I made this for my boyfriend, it turned out wonderful, he loved it, and asked if I could make it again. I did use canned tomatoes with basil and oregano instead of just plain, and added two cloves of garlic instead of one. I put cheese on each individual plate instead of entire pan because i felt it would hold up nicer. Easy to reheat, and very healthy.. I Wonder how it would hold up if premade and frozen for winter months? I have never frozen anything with eggplant before.
My kids loved it - I didn't expect them to like that much. The Sun Dried Tomato dressing is what gives it the terrific flavor.
I made it without the eggplant, but it turned out well.
I loved this recipe! I personally would give it 5 stars, but the rest of my family was only lukewarm about it. Loads of vegetables and not runny at all. Excellent flavor - recipe needs no adjustments. Will make it again even if it's just for me.
Saw the movie "Ratatouille" this summer and was surprised to find a recipe for it. I plan on making this when the weather turns cold.
This is a now a family favorite. Since I made the first time, I have made it again and again and my family loves it every time. I make one change to the recipe though. I use garlic and basil seasoned diced tomatos. It is the only meal I make that taste even better left over. The vegetables and seasonings have time to meld into a great flavor.
this was a good and healthy meal, i added some italian seasoning to it for more flavor. over all everyone enjoyed it and it kept well for leftovers. i will make it again.
