Added sussage (ground) to dish. My husband and I thought it was great. Easy to make. We rated this a 5. Try it you will like it sandy from sw Florida.

Just so happened we had fall vegetables coming on and the dish turned out so fresh and good. Great accompaniment to beef roast.

The blend of flavors was delicious and with very litlle preparation time. Low calories per serving was very attractive.

Next time I would use a smaller casserole for the cheese-melting step - would've been more moist. Very delicious!

I will email this recipe to many of my friends. Its easy, fast and the best Ratatouille I ever cooked. I used low fat Italian Dressing instead of the Tomatoe Vinaigrette and sauted the vegetable in fat free chicken broth.

This recipe is not just great in taste, but it is also healthy for you. this recipe takes the place of meat; instead of meat all the time we get to take a break from all that red meat. Even my children was complimenting me saying this recipe tasted great; these are children that do not like vegetables. My family and I thank you for another great tasting recipe.

My husband does not like EGGPLANTS, but he loved this dish so much and he wants me to make it again!!!! It was great. I loved it, too!!!!
