My 2 and 5 year olds even liked this one. The flavor was very good. I have added chicken to the recipe and made a meal of it.

My family loved this recipe. I made a full meal of it by adding sauteed sausage to the mix. I also substituted yellow squash for the peppers for the kids.

this is a great way to get some veggies into your diet. i sliced up some cooked Adelle's Portobello Sausage & put it on the veggies before spreading cheese and baking. awesome!

I was very surprised! My husband doesn't like parmesan, eggplant, or zucchini; but he really liked this. In fact he asked me to make it again sometime. I did have to adjust it so that it would be just enough for two, but that wasn't hard to do. And it is a good recipe for my special diet I have to eat.

Went to 2 stores looking for the vinaigrette - gave up and used Italian dressing - delicious! May make for Thanksgiving dinner!

I suggest using a dutch oven to brown the veggies as the skillet I used should have been bigger, but that was the biggest I had. Took a little longer to prepare but the dish was excellent.

I made this last fall and have been making it over the summer also. My family and friends really enjoy it, so I'll continue to make it.
