Oh, put a pan of water on the bottom rack of the oven. This will keep the top from cracking. Worked great for me!

I substituted raspberry liqueur for the orange and so did not use any peelings. One thing that should be added at the end of the recipe is to leave the cheese cake in the oven for one hour after turning the oven off with the door open. This prevents the cheese cake from cooling too quickly which can cause excessive cracking in the top surface.

The combination of chocolate and orange was a delicious tasting idea. All my friends loved it. It was even better the second day.

Use Mango in the recipe as well for a great treat. My kides love it.
