Fiesta Chicken Dinner

We really liked this. We used our favorite spicy salsa, added some corn and cilantro and it was super yummy. Leftovers did not last long.

What You Need

lb. ground chicken

Tbsp. oil

pkg. (14 oz.) KRAFT Deluxe Macaroni & Cheese Dinner

cups water

jar (16 oz.) TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa

tsp. ground cumin

can (19 oz.) black beans, drained, rinsed

green onions, sliced

1/2

cup BREAKSTONE'S or KNUDSEN Sour Cream

Make It

COOK chicken in hot oil in large nonstick skillet on medium-high heat 5 to 7 minutes or until chicken is no longer pink, stirring frequently.

ADD Macaroni, water, salsa and cumin; stir until well blended. Bring to boil. Reduce heat to medium-low; cover. Simmer 10 minutes.

STIR beans and Cheese Sauce into macaroni mixture; cook until heated through, stirring occasionally. Sprinkle with onions. Serve topped with sour cream.

I had never used ground chicken before and came close to using ground beef instead. We are trying to eat a little heathier so I gave it a shot and loved it! This dish is very tasty and easy to prepare. Kids loved it, too.

Instead of using ground chicken, I used filets cut up into chunks.
