This stuff is fabulous! I made it for an appetizer on Thanksgiving and it got rave reviews. I almost felt guilty about all the compliments I got because it was so easy it was almost no work at all. I have already made it two more times since then, just as a weekend snack. My husband and I munch on it all day. You can also just do half the recipe if you need less. Put the tomatoes and the cheese mixture into containers and put them in the fridge and you can make the rest the following day.
