Hi, I made this yesterday for a light supper, we were getting in a rut with early winter meals and I thought I would try something different. My wife is diabetic and I try to prepare meals with that in mind. She really enjoyed it and I also toped it off with your Lemon Mousse with Raspberry Sauce, very easy to make and looks like you spent a lot of time making them. Love It, Sam

I made this recipe for lunch today and it was very good. The family had no idea how quick it was to make. I also made it with ham and with turkey. I will make it again and passed the recipe on to a friend at church.
