This recipe is very yummy and healthy, too. I have made it with the chicken pieces suggested as well as with boneless skinless chicken breasts and have liked it both ways. This is a great family pleaser. My three year old will eat the chicken, and the grown ups can eat the chicken and the really good stuff (artichokes, olives and tomatoes, oh my!).
Definitely one of those dishes to pass around!
