Absolutely delicious! My husband just loved it and after substituting some ingriedients for either higher fiber or lower cal, it ended up being even more healthy.

What a great combination. The tomatoes just added that extra little somehting. I served this for breakfast for my church. I printed out the recipe because sure enough a lot of people wanted the recipe to take home and make this for their breakfast.

Easy & hearty. Used the recommendation of other reviews and chopped tomatos and used a little tomato sauce. Was a little too juicy (from baking the tomatos) for some people, but I loved it!!! DEFINITELY season it before you bake it, otherwise may turn out a little bland. It was also a beautiful presentation - - can't wait to make it again!

this is perfect for a quick and easy brunch:cleanup was super simple too. I used diced tomatoes so it wouldn't be sweet, it was perfect. It's a crowd-pleaser

I used diced tomatoes w/ onion and garlic then added a little bit of spagetti sauce (for a little more flavor). It was VERY good and surprisingly filling. I would make this again.
