this was good, but I think it would have been better with DICED tomatoes, rather than stewed. Everyone ate it regardless.

For those of us who have to watch our cholesterol, you can make this recipe using egg whites instead of the whole egg. It's just as delicious! Also use fresh tomatoes instead of stewed, which also reduces the sugar content and salt content if you are diabetic!!

In reply to " cook", you read my mind... as soon as I saw this recipe it screamed grilled potabello cap. Just make sure you drain upside down on paper towels before assembling.

We like things spicy at our house, so I substituted a can of Ro-tel spicy tomatoes for the plain stewed tomatoes. It was a big hit! I'm also going to try it served over a large grilled portabello mushroom instead of the english muffin for my ladies group.

served this for brunch to lady friends and it was greatly received. It also gave me a chance to use my home grown basil. I would make this again. In fact I had to give the recipe to several of the ladies.

This was very tasty! I added more cheese to the tops of the muffins, which enhanced the taste. But it didn't look as presentable as I thought it would have. Nevertheless though, I will definitley make it again for my family!

This was a disaster. Made this Christmas morning for family and we ended up having bagels for breakfast.

I made this in a 9" I pan added fresh italian seasoning to the tomatoes and let the tomatoe mixture sit over night. I used swissed cheese instead, it was great and so easy.
