What You Need

pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken

1-2/3

cups hot water

1/4

cup butter or margarine

pkg. (10 oz. each) frozen chopped spinach, thawed, well drained and patted dry

cup KRAFT Grated Parmesan Cheese

cup chopped fresh mushrooms

small onion, finely chopped

eggs

Make It

HEAT oven to 400ºF.

MIX stuffing mix, hot water and butter in large bowl until blended.

ADD remaining ingredients; mix lightly. Shape into 60 (1-inch) balls. Place in single layer on 2 rimmed baking sheets sprayed with cooking spray.

BAKE 15 to 20 min. or until lightly browned.

Make Ahead

Prepare and bake spinach balls as directed; cool completely. Place in freezer-weight resealable plastic bags; freeze up to 3 months. When ready to serve, thaw in refrigerator. Place on baking sheets and bake in 400°F oven 10 to 15 min. or until heated through.

I tried this for Thanksgiving. When a picky 15-year old says, 'It's okay, I 'll have some of that,' and asks for more the next day, you KNOW it's good. This is definitely one to make again.

I brought these to a gathering with my co-workers and they were gone in seconds. Everyone wanted the recipe. They were so easy to make and smelled so good cooking. I couldn't find the Monterey Style stuffing locally but substituted with the Savory Herb. Excellent.

Nice to finally see a recipe that isn't loaded with fat. These were a hit even with my guests who normally don't eat healthy foods. I like the fact that the leftovers can be frozen for later use, because 5 dz spinach balls is a lot!

TOO GOOD TO BE SO EASY! Everyone could not get enough. I used tablespoon measure for perfect shape and form. I did cut the spinach down a bit. I Agree, that some were hesitant to try (I even had someone ask me what was wrong with the sausage- because she thought they were sausage balls)But overall --YUM YUM YUM- WILL make again
