What You Need

lb. white or Yukon Gold potatoes (about 10), peeled, cubed

cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream

1/2

cup (1/2 of 8-oz. tub) PHILADELPHIA 1/3 Less Fat than Cream Cheese

tsp. onion powder

slice OSCAR MAYER Bacon, cooked, crumbled

green onions, sliced

Make It

COOK potatoes in large saucepan of boiling water 10 to 15 min. or until tender; drain. Place potatoes in large bowl. Add sour cream, reduced-fat cream cheese and onion powder; mash until creamy.

SPOON into lightly greased 2-qt. casserole; cover with plastic wrap. Refrigerate up to 2 days. Remove from refrigerator 30 min. before baking. Discard plastic wrap.

HEAT oven to 350°F. Bake potatoes 1 hour or until heated through. Sprinkle with bacon and onions.

Make Ahead

Assemble recipe as directed but do not sprinkle with bacon and onions; cover with heavy-duty foil. Freeze up to 1 month. When ready to serve, thaw overnight in refrigerator. Bake, covered, 1 hour or until heated through, uncovering the last 10 min. Sprinkle with bacon and onions.

Variation

Use any savory flavor of PHILADELPHIA Cream Cheese Spread to season the potatoes. Or, roast fresh garlic and add to the potatoes for creamy garlic mashed potatoes.

Variation

Sprinkle baked casserole with OSCAR MAYER Real Bacon Bits, chopped chives and/or KRAFT Grated Parmesan Cheese instead of the suggested toppings.

This is wonderful even without the bacon pieces or any topping. Peak your potatoes a little before you bake them and you will have a beautiful looking dish with lightly browned peaks.

I can't wait to make these again for Thanksgiving! This is certainly an easy "stress-free" way to make potatoes and it will be a big help for Thanksgiving to have them made ahead of time. Creamy, smooth and delicious. Thanks for sharing.

i thought these potatoes had WAY too much onion powder in them! i would not make them more than a day ahead of time, they got really dry.

I have made this recipe numerous times for different gatherings, it's great in that you can make it ahead of time. I've also added in shredded cheddar and sprinkled same on top at end of baking period

It was great.... I did make a change or two instead of sour cream I added sour cream chip dip with green onions GREAT!!!! sure is nice to do for company... the day before everyone LOVED them

I made these because they were make-ahead and actually made them the day before I had my Christmas dinner. Tasting them the day I prepared them, they were DELICIOUS. When I heated them the next day, though, they dried out a lot. I added milk per recommendations on here, but if you are making them ahead be sure to add more milk than you think you should before putting them in the oven. I did eat all the leftovers- just added a lot of milk!

This was a great alternative to traditional mash potatoes which are a pain to make, as they have to be made at the very last minute while you're trying to get everything else done at X-mas or Thanksgiving. I added garlic powder to this and also mixed in some grated cheddar cheese and topped with cheddar towards the end of the cooking time (I did not add the bacon/chives as directed, and it was great). To add some moisture and taste, as I had premade/refrigerated this before baking, I also added a few drops of some heavy whipping cream before placing it in the oven. Everyone raved about this--it will definitely replace mashed potatoes at holiday gatherings from now on.
