I grew up with Spanakopita. This is not the original, but it is a good substitute, ez to make and ez to eat. I really didn't understand the rolling instructions, and found it best just to lay the mix on the short end and roll. Do not cook it too long or it will be dry.

I made these for New Years Eve and they were really good. I did add a few extra ingredients of my own after reading some of the comments. I added some garlic, onion and crushed red pepper for some zip. I also used tomato & basil feta instead. My family loved them and asked for the recipe. Great recipe to make ahead!!!

The filling was very easy to make and it was very yummy. I served it on Christmas and everyone loved it. I liked how I could make it ahead of time. I only used some of the rolls and put the rest in the freezer, which I like. Now I have some for another time. This was my first time using Phyllo dough and found it kind of hard to work with - it's so delicate.
