I use egg beaters in place of eggs, which makes it healthier. I love them. I put them in a wrap with a little cheese. My mom eats them plain with feta cheese and she loves them.

I liked it but really it's not a pancake its more of a spinach omlet.

We have made this several times for a light dinner...very tasty! The feta makes a great salty crust on the "pancakes". Yummy!

Nice light breakfast and healthy. I added 1 t. salt and 1 t. fresh pepper to egg mixture. Also changed to 1/4 c. chives for a lighter taste. Will make again.

Fast, easy and delicious. My husband said it was a keeper before I had even taken a bite. I am anxious to try it with egg substitute to make it even healthier.

i was having brunch with some friends and two of them cannot have gluten products and this was the perfect thing to make. i did have to get a different sour cream though, and i was transporting them to a different house so they weren't off the griddle fresh but they still tasted great. i'll make these again but maybe add more fetta!! ;'>

I have made these many times. They are so easy and quick to make. Crumbled bacon or chopped ham can be added to mixture...it works well!
