I have made this recipe twice. The first time I felt like 1 and 1/2 cups of crushed graham crackers was not enough to cover the bottom of a 9 x 13 pan. It was HARD to cover the bottom of the pan. The second time I used two reduced fat graham cracker pie crusts. I just divided the mixture into two and made two pies. It cut easier and still tasted the same. Wonderful dessert. People were raving about it. One said she didn't like lemon but she liked this. Another said it tasted like candy. Yum.
Very easy to make. I made it for for our food day at work. Every one just loved it. A very wonderful dessert for the summer.
This is a great spring dessert because it is so light! I served this to a group of women and they all loved it!
I made this for my mom's birthday and everyone loved it (especially my 18 yr old niece). I brought my co-worker a sample of it - we are both always looking for quick and easy recipes for church functions. We decided this one would be a winner!

I made this recipe today(April,18th, 2004) and it was absolutely delicious. Instead of using a 9x13 inch pan, I cut the recipe in half and used a graham cracker pie crust instead. We had the dessert after our dinner and needless to say the dessert is gone. next time I will make the full recipe and use two graham cracker pie crusts..... Thanks for the fantastic recipe. I made this for coffee hour at our church on Easter, and they have asked me to make it for another function this weekend. It was very easy to make and was a colorful addition to the snake table.
