As with a previous reviewer, I also needed an easy carrot cake recipe for a wedding cake I was baking. I substituted applesauce for the mayo and omitted the nuts. The result was moist and I received many compliments. I will make this recipe again.

I needed an easy recipe for a wedding cake I was making. Cake was heavy, since it was 3 tiers high. The guests all raved about the flavor and wanted the recipe. This one I'll keep on hand to make again & again.

Great for first time try. Received compliments on the cake where it tasted similar to those made in a bakery. Really simple and non messy recipe. Will definately do again.

My guy LOVES carrot cake - and had never had one made from scratch! Using the cake to bypass a lot of time and steps was awesome.

Iused a yellow cake mix and a Bunt pan at the temperature indicated. I had to bake it for close to an hour. It was golden brown and extremely moist. Instead of the icing I used a light dusting of powdered sugar. My husband said not to lose the recipe.

I used a Carrot Cake mix in place of the Yellow Cake mix. Very good.

only problem i had was what to use to break up carrots and nuts with i didnt have a good blender
