Excellent recipe. I used the matchstick carrots and what an easy and delicious side dish. Even good the next day!

My husband brought home some leftover of this recipe. It is outstanding. I would, however, use the prepackaged shredded carrots to insure it was sweet enough. Some bigger carrots have a bitter, old, taste that could ruin this recipe. Someone who wasn't versed in vegetables could get in trouble using older carrots. This recipe is EASY and YUMMY!

I used the non-fat mayo. It was an absolute hit at a huge Thanksgiving dinner! Even the finicky kids ate it. I used plenty of the green part of the green onions and added a little water to the dressing.

This recipe was really terrific. I love carrots and am always looking for new recipes. I have also used the dressing for other salads and it worked really well. I made the carrot salad for a church dinner, and it was the first to go. Many requests to quadruple the next time!!!!!!

It was absolutely delicious. Only, the next time I am going to try it with lite mayonnaise which should take about 400 calories off of the whole recipe.
