Will be making this again for sure! Pretty much followed the recipe-added black beans-then cilantro and avacado the last few minutes of cooking-full of flavor!!My husband loved it too!!

I dont follow recipes well...I bought a cooked rottiserie chicken and put in a pot with water to boil for an hour, drained and used that as the chicken stock, pulled the chicken off the bones and added rice to the recipe. I also couldnt find chipotle peppers, so i used can of diced tomotoes with chilis and added a little cayene pepper. I thought it had a big lime flavor at first, but adding salt mellowed it out and made it perfect. Right before serving, I added fresh avacado pieces and cilantro. Absolutely going to make again! Will probably add zucchini and black beans next time too.

I made this last night for my family and I used a Serrano pepper instead of Chipotle and I did not have any cilantro but i thought that the soup was pretty good. My husband is from Venezuela and thought that it was excellent. I will probably be making it again for him more than for myself.

I used roasted red peppers instead of the chipotle peppers because it's all I had. But it was really good! I'm adding this recipe to my collection!!!!!

I really liked this soup...but I ended up altering it significantly because I didn't have everything on-hand. I used red, green & yellow peppers, because I did not have any chipolte peppers. I also added a little chili pepper too. I also added the black beans like others suggested. I only added lime juice from 2 limes...whatever that is the equivalent of...but I thought it could use more. I REALLY thought the cilantro finished it off! I made it with tortilla chips & cornbread! Yum!

I thought this recipe had WAY too much lime. We ended up throwing it away because we couldn't eat it

This was a hit with the whole family. My son commented that it would have been great with some crunchy tortilla strips and avocado like a tortilla soup.

Best soup I've ever made! I didn't have chiles so I used southwest chipotle mrs. dash. My boyfriend likes pasta in his soup so I added some of that, plus some corn as some other's suggested. I served with homemade tortillas strips with the mrs. dash and garlic powder. Awesome!
