I dont follow recipes well...I bought a cooked rottiserie chicken and put in a pot with water to boil for an hour, drained and used that as the chicken stock, pulled the chicken off the bones and added rice to the recipe. I also couldnt find chipotle peppers, so i used can of diced tomotoes with chilis and added a little cayene pepper. I thought it had a big lime flavor at first, but adding salt mellowed it out and made it perfect. Right before serving, I added fresh avacado pieces and cilantro. Absolutely going to make again! Will probably add zucchini and black beans next time too.
