We make this recipe all the time and we love it, but we always change a few things. We only make 4 enchiladas at a time but use extra filling. basically, you can use half of all the ingredients for the filling, then only stuff it into 4 shells. It is amazing. And we always cook the chicken with lots of garlic and cumin to spice it up.
