VERY CREAMY - THEY WON'T KNOW IT'S LOW CARB UNLESS YOU TELL THEM - SO JUST SERVE IT AND TELL THEM YOU'RE GIVING THEM A SPECIAL TREAT. YOU REALLY CAN COUNT CARBS AND ENJOY MANY "SWEET" TREATS, JUST USE SUGAR REPLACEMENTS - AND SPLENDA IS THE VERY BEST SUB WE'VE EVER TRIED. YOU CAN'T TELL IT FROM SUGAR - EXCEPT IT IS A BIT SWEETER. AND... IT WORKS GREAT IN ALMOST ANY RECIPE THAT USES SUGAR. VERY YUMMY RECIPE!

Up to this point I never made a cheese cake......now I'm asked to make it all the time for work and for family birthdays......this has to be the easiest and best cheese cake ever..... of course now I do variations to the cheesecake which makes it even better. Thanks

Since I'm allergic to almonds, I tried it with crushed wheatstone crackers mixed with Splenda for the crust. Ít was the center of attention at the office pot luck lunch!!

This recipe is great, my boyfriend, grandmom, cousin, and I really loved it! The almonds made an interesting tasting crust. Will make again. :)

Excellent recipe. If you don't tell anyone they won't know it is low sugar and low carb. I used sweet & low for my sugar substitute and the flavor was very good.

I used splenda in place of all of the sugar, although I think that maybe it needed a whole cup instead of just 3/4 cup. I think it also needed a little bit more vanilla. Next time I make it I am going to try mixing a little cinnamon in with the nuts before spreading them in the bottom of the pan.
