I loved these. The jell-o added a sweet taste. Instead of using the cool whip I went all out and used strawberry frosting...it tasted great!

When I made this I only had lemon cake mix. So I used lime jello, they came out green but very tasty. They were good with a cream cheese frosting. It would be a good treat for St. Patricks day.

The gelatin mix makes the top of the cupcake sink after cooling. If I had it to do over again, I would have just used food coloring and maybe a little extract for flavoring.

For a Weight Watchers version, I prepared the white cake mix with a 12-oz. can of diet lemon-lime soda (nothing else! This isn't a joke! It's the moistest cake around!), then mixed in sugar-free jello. I don't like making frosting, so I bought WalMart white frosting in a can. I got 27 small cupcakes out of it for 2 points each! (You can mix a chocolate cake mix with 12-oz. can of diet coke. It's the best! My husband loves it!)

These were delicious! I made mine with the Funfetti cake mix (made the classic white version w/3 whole eggs instead of 4 whites) and Cherry gelatin mix. I also used fat free whipped topping. The mix had "double the pudding" so the cupcakes were very moist and soft. I will definitely make this again for myself and my 3 year old!

I made this recipe and it did not turn out well. The cake seemed very dry. I made another rendition using, strawberry cake mix, with 1/2 pack the jello and vanilla frosting with the sprinkles and it was wonderful.
