This is a fabulous one dish meal. In a neverending attempt to cut fat and calories, I used fat free cottage cheese, and Kraft fat free shredded, only 1/2 the parmesean and Eggbeaters. I will make this dish many more times. Next time, I would like to try the spicy roasted peppers in place of the sweet.
