raspberry is a natural with salmon. also works well with trout, bass, mahi, and the subtley-flavored whitefish. i don't recommend trying it with more delicate fish such as orange roughy (if you can even find it anymore) or perch. too overpowering.
i would garnish this plate with some fresh raspberries and a sprig of parsley, not mint (won't go well with the fish). dill will also enhance, but be light-handed, a fresh sprig as a garnish is sufficient.
serve with a rice pilaf and flat italian green beans, or for a change of pace, couscous and baby green peas with baby mushrooms, cocktail onions and slivered almonds.
