I am not a biscotti fan.. but I made these for my sister and ended up keeping 1/2 the batch! They are really good. I would recommend them.

These were so easy to make and turned out so well that I invited several neighbors to sample them at an open house I held at my new home. Everyone in attendance demanded the recipe and it is spreading all over town!

I made this cookie and instead of making the heart-shaped cookie I made stars for Christmas, and instead of the dried cherries I used dried cranberries. Needless to say they were a big hit with my family, and myself. I am going to make them again!!!!

I put twice the amount of chips that the recipe calls for. 1 1/2 cups of white chocolate, and 1 1/2 cups of semi-sweet chocolate chips. The cookies are a cross between candy and cookie. Very unique tasting dessert.

Don't grease and flour the pan. Also, recipe should suggest that the cherries are to be chopped.

I omitted the nuts because I was taking it to a party with friends that I know can't have nuts. The cookies were a big hit. Everyone requested the recipe! My advice when making is to use a good cookie cutter. A flimsy one just won't do it when cutting through the cherries. Next time I think I might sub dark choco for a different taste.

It needs a pinch of salt and I beleive cherries go better with almonds, so I substituted them for the pecans. This is a much easier approach to biscotti than the traditional recipe so I will make this in many variations--different fruit and chocolates througout the year.

I used white chocolate chunks with out chopping them, so I couldn't roll this out. I ended up cutting into diamond and dipping in red chocolate. You could fancy them up, with more chopped cherries or pecans, sprinkles...you get the idea. I will make this recipe again. I used dried cherry flavored cranberries as I didn't have time to get cherries. My co-workers loved the recipe and my husband wouldn't quit eating them.
