YUM-O - kids and hubby all liked - it's rare we all agree on something....tried the chicken & veggie variation, next we'll try the pepperoni & pizza sauce, YUMMMM!!!

This is the BEST soup I have had in a long time. I make this recipe at least once a month. My whole family love this recipe. I usually serve with tortilla chips and top with a dollop of sour cream.

Made it with chicken, the corn/bell pepper & salsa options. Crushed a few tortilla chips on top, added a dollop of sour cream, and had a great, family-pleasing cheesy chicken tortilla soup. Make this about once a month now.

I tried the veggie version and LOVED IT! I only used half of the suggested amount of Velveeta and can't imagine using any more than that. This was still creamy and cheesy - but with half the fat. I would DEFINITELY recommend this recipe and would suggest using half the cheese. Yum!

I am not cooking meat anymore so i did the meatless version and it rocked. my husband enjoyed it very much.

I made the ground beef version w/ ground turkey and it turned out so yummy! I will definitely try out the other varieties because it's so quick and easy.

YUM!!! I omitted the oil because I did not use any meat and did not add all of the veggies that it called for. I also only used 5 oz. of velveeta instead of 8oz. My son and I couldn't get enough of it! You'll keep eating even if you're full!

LOVE IT, LOVE IT, LOVE IT! I've made this soup twice already this week. My wife thinks i am an awesome cook... now! :) This recipe is a keeper.
