I love this recipe. I tried it with beef, chicken and vegetables only. It was great either way. My family and I love it so much that we make it by the batches and share it with our neighbors. Thanks! This one is a keeper.

I did the ground beef option but used ground chicken instead. It was delicious! Everyone in my family loved it. It's a satisfying, filling soup that's great for a cold winter night. We'll definitely have it again.

I did the option using ground beef, but I used ground turkey instead. It's just as flavorful as beef but it is healthier and less expensive! I was very surprised with how easily this meal freezes. It was simple and yummie!

I used ground turkey in place of the ground beef, I browned the meat with a little salt, pepper and chopped onion and then I added 1 teaspoon of ancho chili powder with the rest of the ingredients. This was our Christmas dinner and we loved it. Flour tortillas served as the bread. Nice break from baked ham or turkey. Definitely a keeper!

When I use hamburger, I substitute beef broth instead of the chichen. We love this soup recipe and it freezes very well.

I make several batches of these SUPER soups at a time, serve them at family dinners (when it's my turn to bring the main course), and freeze the rest. Some in family sized containers, some for work.

I have made the beef version several times now and we looove it. I make a double batch and freeze half for a quick supper later. We added a little more cheese and made a dip out of it with tortilla chips. My picky 3 yr old twins loooved it.
